Oleic acid
Oleic acid is a monounsaturated fatty acid according to the IUPAC (C18H34O2); it is a linear chain monocarboxylic acid, and a cis-9 double bond. It belongs to the Omega 9 series and is very well known for its health benefits.
This product is of 100% vegetable origin, almost colourless, liquid at room temperature and odourless. It is considered to be a highly stable compound against oxidation. Due to its vegetable origin and its composition which is very similar to the Holm oak acorn, with a 70% minimum oleic content, its application in Iberian pig feed is highly recommended, with the final fattening achieving sufficient fat to obtain the desired intramuscular infiltration and also provide Iberian ham with its prized aroma and taste.
It has applications in pig farming.
